Om LOMBARD is sharing one of his BIO BAKER’s secrets : RECIPE of his FAMOUS BIO ORGANIC CHOCOLATE BRIOCHE for Le Mauricien!

Om LOMBARD, Mannequin - Boulanger Bio Organic, est le créateur il y a bientôt 5 ans du premier Atelier de Fabrication de Pains et Pains Briochés "Boulangerie la Provencale" à Grand Gaube ( sur Facebook " La Provencale Boulangerie" Website : www.omlombard.com ), Ile Maurice.
Utilisant exclusivement de la FARINE BIO ORGANIQUE et des produits de haute qualité gustative et nutritionnelle, Om LOMBARD vous propose en EXCLUSIVITE pour Le MAURICIEN sa recette de BRIOCHE TRADITIONNELLE au chocolat noir.
Pour deux belles brioches au chocolat de 550 grs environ après cuisson, il vous faudra préparer :
- 480 Grs de Farine BIO ORGANIQUE de TYPE 65, facilement trouvable au super marché ( Vous pouvez utiliser de la farine ordinaire TYPE 65 non bio aussi)
- 8 grs de Sel Marin Fin
- 20 grs de levure boulangère
- 170 grs de beurre doux coupé en petits cubes et à température ambiante
- 65 cl de lait 1/2 écrémé
- 4 oeufs
- 80 grs de sucre roux le moins raffiné possible
- 185 grs de Pépites de chocolat noir le plus pur possible
- 2 grands moules rectangulaires métaliques ( voir photo)
- un grand saladier pour la préparation de la pâte
- un peu d'huile d'olive
- un petit pinceau
Bien préparer tous les ingrédients à portée de main car la préparation nécessite un timing parfait!
1/ Mélanger la levure avec le lait dans un récipient
2/ Mélanger dans le saladier la farine avec le sucre, le sel et les oeufs ( jaune et blanc), puis incorporer doucement en mélangeant le lait
3/ Malaxer pendant 15 mn à pleines mains de façon à obtenir une pâte homogène dans le saladier en saupoudrant de farine pour éviter que la pâte obtenue ne colle
4/ Incorporer les cubes de beurre lentement en continuant à malaxer la pâte pendant 15 mn toujours avec de la farine saupoudrée
5/ Etaler la pâte obtenue au rouleau à patisserie (épaisseur env 2 cm) sur un plan de travail puis répartir de façon harmonieuse les pépites de chocolat, rabattre et re malaxer pendant 5 mn la pâte
6/ Laisser reposer le pâton pendant 15 mn recouvert d'une toile coton
7/ Rouler le pâton au rouleau puis le diviser en deux parties égales, et rouler en boule chaque pâton obtenu et laisser reposer 20 mn
8/ Etaler les pâtons et les rabattre pour leur donner la forme du moule, et, après avoir badigeonné les moules avec un petit peu d'huile olive étalée au pinceau, mettre les pâtons dans les moules et les recouvrir, puis laisser reposer 30 mn
9/ 15 mn avant la fin du temps de pose, allumer le four ( chaleur en haut et en bas) à 200/220°
10/ Temps de pose terminé, mettre au milieu du four pendant 30 mn et sortir du four puis démouler et laisser refroidir
11/ Vous pouvez trancher et toaster légèrement et servir avec une boule de sorbet dans une petite assiette, un dessert SIMPLE et ORIGINAL, REGALEZ VOUS!

Tournage du Clip International LI TOURNER 2013, une reprise par Alain RAMANISUM lui-même de son énorme tube, remixé par DJ ASSAD et Willy WILLIAM.
Le tournage s'est entièrement déroulé à Maurice en mai 2013 Produit par SCORPIO, dirigé par DREAMLIFE Production, avec la caméra magique de HYSTERIA PROD qui en plus d'être un professionel Mauricien reconnu au niveau International, est aussi un passionné ( www.) avec qui le TEAM OL69 de Om a eu beaucoup de plaisir à travailler.
Om LOMBARD, au travers de son TEAM OL69, a géré la quasi totalité des figurants issus des 4 coins de l’Ile Maurice (y compris le transport et le Make Up avec sa M.U. A habituel, Deeya BIZLLAL) afin de donner la touche finale parfaite (il figure lui même dans ce Clip).
Le tournage a eu lieu dans le sud de l'ile Maurice, à Bel Ombre, encore sauvage et préservé, pendant une durée d'une semaine environ.
LI TOURNER sera à n'en pas douter, un, sinon, LE TUBE DE L'ETE en France et dans de nombreux pays.

Shoots v/s shows: Both. Shoots allow me to be a momentary actor while being on stage is like a drug to me.
A guilty pleasure: Bio-organic brioches!
If not a model, I would have been: Once again, I am lucky because I am an all-rounder.
Was modelling a childhood ambition for you?
No, it happened by chance.
Is changing people’s perception of you as a model something that is important to you?
Yes, and this is why I am a bio-baker along with being a model. Bio-baking is not a virtual world. It is for real, not for show. You are faced to yourself without any audience. It involves no camera, no action and no reaction. No one will do the job for you.
You are also writing a book?
I have been writing since long about fashion and health issues. The wish for writing a novel was being nurtured since long too. I did not look for a subject back then because it was not the right time yet. In October 2012, I decided to make it a reality. In the night of October 28, I woke up at 1.30 with a subject trotting in my head. The title of the novel will be “Des jours et des nuits” and is inspired by the places I have been. It is not about my life per se.
I am leaving for an international shoot in Sahara shortly. I will then be in Pondicherry, because it is where the plot unfolds in the novel. I will be there so that I can assure authenticity in the novel.
You’re surrounded by images of beauty in your job, what do you find beautiful in a person?
Physical beauty is the first thing you see but it does not always guarantee internal beauty. As I like to work with the same people over a long span of time, I try to find people who are also beautiful inside. Modelling is a superficial world and I try to go beyond this. Even if I am the leader of my team, I consider myself as one of the pieces of the team and I make sure to choose the members of my team well.
A stereotype of a ‘male model’ is that they’re dumb, what’s your view on this?
I am not only a model; I am also a businessman and a bio-baker. The fashion industry uses models like ‘Kleenex’. It is also impossible to live as a model in Mauritius because modelling is not really remunerative in Mauritius. Most of the time, the customers earn money form modelling, more than the models themselves. I do not foresee any change.
Do you ever find it difficult to recognise yourself in pictures?
Not really. In any case, I do not like too much of Photoshop with my pictures.
Do you have any friends among other models or they feel jealous about the amazing success you’ve had?
Basically, I do not have friends. I work 18 hours a day, and 6/7. I do not have time to have friends. I have my family and my team, the Om team. My team is like a living family to me, some come, some go, but the team stays.
Any parting message?
In today’s world, we are all attracted and influenced by appearance, stars and celebrities. We tend to forget the most important thing-the real ‘us’. We are in a society which favours appearance to the detriment of our selves. Let’s change this and be the heroes of or lives!
